De bourgogne van de Mediterranée, zo typeert eigenaar Marco de Grazia zijn verfijnde, mineralige Siciliaanse wijnen, afkomstig van hellingwijngaarden op de noordelijke flank van de vulkaan de Etna. De hoogte zorgt voor verkoeling en verfijning in de wijnen.

De biologische aanplant en de ambitie om topkwaliteit te maken dwingen Marco tot lage rendementen zodat de inheemse druiven een prachtige expressie hebben. De ongeveer tien hectaren tellende Santo Spirito-wijngaard ligt op de noordelijke helling van de Etna, heeft een diepe, rijke vulkanische bodem en is hierdoor wat productiever dan de andere crus.

Desondanks heeft deze rode wijn – die zestien maanden in eikenhouten fusten rijpte – een prachtige concentratie met een volle, ronde smaakstructuur. Een verleidelijke etna rosso van hoog niveau. De jaarproductie is slechts 8.000 flessen.

Proefnotitie

Volrood van kleur en pittig fruitig van geur, met nuances van rijpe kersen en vuursteenaroma. De volle, ronde smaak is lang en geurig, met pittige tannine in de afdronk.

Drinken bij

Prima bij gevogelte, varkensvlees en kruidige ovenschotels.

Houdbaarheid

Op dronk vanaf twee jaar na de oogst, houdbaar tot zes à zeven jaar na de oogst.
