De Castello Romitorio Brunello di Montalcino Filo di Seta 2018 is een expressieve rode wijn uit Toscane, Italië. Gemaakt van 100% Sangiovese-druiven afkomstig van wijngaarden met een uniek microklimaat en zwarte leisteenachtige bodems. De wijn rijpt 30 maanden in eikenhouten vaten, wat resulteert in een wijn met een diepe complexiteit en structuur. In de neus aroma's van rijpe en gedroogde kersen, truffel, karamel, gedroogde bloemen, nootmuskaat, chocolade sinaasappel en cassis. In de mond is de wijn vol en gelaagd, met stevige maar goed geïntegreerde tannines en een lange, elegante afdronk. Deze wijn is nu al heerlijk, maar zal nog beter worden na 2024.

Proefnotitie

De wijn presenteert zich met een diepe robijnrode kleur. In de neus aroma's van viooltjes, lavendel en steenstof, die evolueren naar gedroogde aardbeien en hints van kruidnagel. In de mond een fluweelzachte textuur met een ziltige mineraliteit, gevolgd door rode en zwarte vruchten. De afdronk is lang en complex, met fijne tannines die een lange en gestage evolutie beloven.

Drinken bij

Deze Brunello is een uitstekende begeleider van rijke vleesgerechten zoals wild, lamsbout of rundvlees. Ook heerlijk bij gerijpte kazen zoals Parmigiano Reggiano of Pecorino. Voor een klassieke combinatie: serveer met Toscaanse pappardelle al cinghiale (pasta met wildzwijnragout).

Houdbaarheid

Na decanteren ook jong al toegankelijk. Optimaal van smaak tussen 5 en 12 jaar na de oogst.
