De bourgogne van de Mediterranée, zo typeert eigenaar Marco de Grazia zijn verfijnde, mineralige Siciliaanse wijnen, afkomstig van hellingwijngaarden op de noordelijke flank van de vulkaan de Etna. De hoogte zorgt voor verkoeling en verfijning in de wijnen. De biologische aanplant en de ambitie om topkwaliteit te maken dwingen Marco tot lage rendementen, zodat de inheemse druiven een prachtige expressie krijgen.

De Prephylloxera 'La Vigna di Don Peppino' komt van twee percelen met 130 jaar oude wijnstokken in de Calderara Sottana-wijngaard, die de phylloxera, oftewel de druifluis, hebben overleefd. Deze stokken staan nog altijd op hun originele onderstok, in plaats van op de gebruikelijke, resistente Amerikaanse onderstok, en geven druiven van een magnifieke typiciteit en kwaliteit.

De wijn is aanvankelijk gesloten en heeft tijd en beluchting nodig om zich te openen. Uniek in zijn soort.

Proefnotitie

Volrood van kleur en verfijnd en krachtig van geur, met rijpe kersentonen, karamel en eikenhout. De smaak is vol, zacht en krachtig van structuur, met een aromatische en lange afdronk.

Drinken bij

Complexe wijn, het meest geschikt bij verfijnde wildschotels of gevogelte. Decanteer hem ruim van tevoren voor het beste resultaat.

Houdbaarheid

Op dronk vanaf drie à vier jaar; houdbaar tot acht à tien jaar na de oogst.
