Wijnmaker Marco de Grazia

De bourgogne van de Mediterranée, zo typert eigenaar Marco de Grazia zijn verfijnde, mineralige Siciliaanse wijnen, afkomstig van hellingwijngaarden op de noordelijke flank van de vulkaan de Etna. De hoogte zorgt voor verkoeling en verfijning in de wijnen.

De biologische aanplant en de ambitie om topkwaliteit te maken dwingen Marco tot lage rendementen zodat de inheemse druiven een prachtige expressie hebben. Guardiola is de hoogst gelegen cru (tot 1.000 meter) met steile hellingen, een arme bodem en smalle terrassen.

De opbrengst per wijnstok is lager en de hoogte en grondsoort geven een wijn met meer zuren en tannine dan lager gelegen percelen. Daarom is Guardiola de Terre Nere wijn die het langst kan (en moet) rijpen. Ook Guardiola rijpte zestien maanden in kleine eikenhouten fusten. De jaarproductie is ongeveer 5.000 flessen.

Proefnotitie

Helderrode wijn met een fris, verfijnd aroma van rode kersen, wat vuursteen en geroosterde tonen. De smaak is sappig en vol, met een frisse ondertoon en pittige tannine in de afdronk.

Drinken bij

Heerlijk bij gegrilde, kruidige worstjes of andere vleessoorten.

Houdbaarheid

Op dronk vanaf twee à drie jaar na de oogst, goed houdbaar tot acht jaar na de oogst.
